Can you tell me what tyre brands have 4.00 x 18  and  3.50 x 19 >Classic Motocross tyres?

Pirelli MT16 has a 110/100X18 and 90/90X21  ( formerly known as 400X18 & 300X21. 175cc bikes and bigger.  They also have a 450X18 (now known as 120/100X18 ).
Cheng Shin C755 is a classic Metzeler 4X5 design tire They have 4.10X18 ( more like a small 350X18), 4.60X18 about the same size as the Motorcross Enduro 4.50X18 or a 400X18  The 450/510X18 is about the size of a Multicross 450X18 which is HUGE !
The CS C183 is a Barum Copy. Especially good for 100-125cc bikes. As they have a 300X18 and 350X18 and 400X18.

What size would a 100x100-18 be in the old style measurement?

400X18.   The MT16 Pirelli was called a 400X18 but when they went to metric sizing they called it a 110/100X18 because it was a bit fat for a 400X18.  More like the 450X18 Metzeler Motorcross Enduro.
