Can someone explain the principle and procedure in using the plunger type choke on a Bing 27. It's on my 72 Sach powered Six Day.

In general a plunger type choke is not a choke at all. It in fact is a valve that actually opens a additional port that allows extra fuel to flow into the air/fuel mixture. With this in mind you are actually enriching the fuel/air mixture not "choking" the fuel system as normally done on a butterfly type of carburetor.
